Chicken Laksa recipe & prepped ingredients delivered to my door, thank you HelloFreshUK!
HelloFresh, what a perfect name for a dinner-in-a-box service company! My good friend in America would always instagram her dinner photos from a food service delivery company called Blue Apron. The best part is her husband started cooking her gourmet dinner, so I was intrigued. I was very keen to try it because my husband doesn’t cook very often either, but Blue Apron doesn’t service England. By a random chance, I received a £25 voucher postcard for HelloFreshUK from this nice girl while having lunch in Soho Square. I was thrilled to find out that HelloFresh offer the same prepped dinner concept as Blue Apron. It was a no-brainer for me to sign up. What I like about this service is that I get to learn how to cook random and surprising dishes. I only chose the 3 meals for two per two weeks, so I still get the flexibility of making my own recipes or still go out to eat (especially I don’t want to miss all these amazing restaurants in central London).
My first shipment box included chicken laksa, grilled salmon and fajitas. My favorite was chicken laksa because it brought memories back from my week of feasting at many hawker centers in Singapore. Chicken laksa can be a national Singaporean dish, along with Chicken rice. The best part was my husband and I cooked it together, he can’t cook but he can bake! Guess what baking requires? An ability to follow instructions and measure ingredients.
HelloFresh was nice enough to let me record their recipe on video as well as publish it on here. Thanks for that! So back to the chicken laksa, the recipe was very yummy and wouldn’t change any flavored ingredients. But to add a little more variety and make it more authentic, I would add tofu puffs and bean sprouts to the soup. I would replace egg noodles with those thick rice noodles (not to confuse with udon), I believe they are called “lai fun”, and that’s what they use in Singapore. Also, I would precook noodles in a different pot to rid of extra starch before adding them into the serving bowl. By the time when the noodle was done cooking in the same pot, I didn’t have very much liquid left (what a shame). The flavor was amazing though, so I wouldn’t change the recipe all that. I forgot to add chicken pot before my kaffir lime leaf but added in afterward. It still tasted good though! I have shortened the instruction descriptions on my video but you can go to their recipe site to see a more thorough list though.
