Happy Friday, everyone! The weather has been absolutely lovely in London this week, it’s the hottest day of the week. When I say hot it’s in late the 70° F or mid 80° F for British standard but with that being said, it is forecasted for 86° F next week. Let’s see how I’ll survive in that heat next week. I am sure SoCal people will tell me to stop whining and deal with it, I lost all my tolerance in dealing with extreme heat since moving out of LA 6 years ago. Friends and family told me that it has been 90° F in LA for the last couple of months, the way how they deal with the heat is to stay in an a/c room during day time. On the contrary, you will see lots of sun worshippers soaking up UV in public squares all over London. The funny thing is most British people assume that Californians are always out sun bathing but reality is they really don’t. No thanks to skin cancer and aging.
If you are thinking of having a bbq and will have leftovers including uncooked sausages and chicken filets, I’ve got the most perfect recipe for you, it’s super easy too. All you need is chicken filets (thigh or breast), good quality sausages and toothpicks or bamboo skewers. I am in love with English sausage options, especially Cumberland meat & apple sausages. Do yourself a favor, treat yourself to a good quality sausage. I made this recipe for the AirFryer but if you don’t have one, you can simply pop this into the oven for 30 mins in 175° C or 375° F. Indulge this with any of your favorite sauce and side of vegetable or salad, my favorite is with salsa and steamed vegetable.

- 4 good quality sausages
- 4 chicken filet (breast or thigh)
- 8 toothpicks or bamboo skewers
- Push and roll chicken filets with a rolling pin for a minute.
- Remove sausage casing with a knife.
- Place sausage meat onto chicken filets.
- Fold filets into half with sausage meat in them.
- Seal chicken filets by threading 2 toothpicks into each filet.
- AirFry meat for 15 mins in 190° C or 375 °F.
